- 1.5 lbs boneless, skinless chicken breasts, cut into bite-sized pieces
- 2 tablespoons Cajun seasoning
- 2 tablespoons olive oil
- 2 tablespoons butter
- 4 cloves garlic, minced
- 1.5 cups heavy cream
- 1.5 cups shredded mozzarella cheese
- 0.5 cup grated Parmesan cheese
- 12 ounces rotini pasta
- Salt and freshly ground black pepper to taste
- 2 tablespoons chopped fresh parsley (optional, for garnish)
Instructions
- Cook rotini pasta according to package directions. Drain and set aside.
- Season the chicken pieces generously with Cajun seasoning.
- Heat olive oil and butter in a large skillet or pan over medium-high heat.
- Add the seasoned chicken to the hot skillet and cook until browned and cooked through, about 5-7 minutes. Remove chicken from the skillet and set aside.
- Reduce heat to medium. Add minced garlic to the skillet and cook for about 1 minute until fragrant, being careful not to burn it.
- Pour in the heavy cream and bring to a gentle simmer.
- Stir in the shredded mozzarella cheese and grated Parmesan cheese. Continue to stir until the cheeses are melted and the sauce is smooth.
- Season the sauce with salt and pepper to taste.
- Add the cooked rotini pasta and the cooked chicken back into the skillet with the sauce.
- Toss everything together until the pasta and chicken are well coated in the creamy Cajun sauce.
- Serve immediately, garnished with fresh parsley if desired.

- For a spicier dish, add a pinch of cayenne pepper to the Cajun seasoning.
