- 2 cups Whipped Cream (Dairy-free alternative: whipped coconut cream.)
- 2 cups Cranberries (Fresh or frozen cranberries work well.)
- 1 tablespoon Orange Zest
- 1/2 cup Orange Juice
- 1/2 cup Granulated Sugar (Adjust as desired.)
- 1 tablespoon Gelatin (Bloom separately for optimal texture.)
- few drops Food Coloring (For a visual pop.)
Instructions
- In a mixing bowl, combine heavy cream and vanilla bean paste. Whip until soft peaks form.
- Gently fold the pre-bloomed gelatin into the vanilla mousse until just integrated.
- Distribute the vanilla mousse evenly into dessert cups and chill for about 10–15 minutes.
- In a saucepan, simmer cranberries with sugar, orange juice, and zest until softened. Puree and strain until smooth.
- Bloom gelatin separately and fold it into the cranberry puree, then lightly whip until airy.
- Spoon the cranberry mousse over the set vanilla layer and smooth the top. Return to the fridge until fully chilled.
- Incorporate a few drops of food coloring to the cranberry layer before serving.
