Description

Recreate the famous tender, crispy, and golden fried chicken fingers from Raising Cane’s in your own kitchen. This copycat recipe uses a tangy buttermilk marinade and a special flour dredge for that signature crunch. Serve with homemade Cane’s Sauce for an authentic taste experience.


Ingredients

  • 2 lbs chicken tenders or boneless chicken breasts (cut into strips)
  • 1 cup buttermilk
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon paprika
  • 1 ½ cups all-purpose flour
  • 1/4 cup cornstarch
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2 teaspoon garlic powder
  • Vegetable or canola oil, for frying

Instructions

  1. Combine chicken, buttermilk, salt, pepper, garlic powder, and paprika in a bowl or zip-top bag. Mix well and marinate in the fridge for at least 2 hours, ideally overnight.
  2. In another bowl, whisk together flour, cornstarch, salt, pepper, and garlic powder.
  3. Remove chicken from marinade, letting excess drip off.
  4. Dredge each piece in the flour mixture, pressing firmly to coat.
  5. Let rest on a rack or tray for 10 minutes.
  6. Heat 2-3 inches of oil in a heavy pan to 350ºF.
  7. Fry chicken in batches for 4-6 minutes, turning once, until golden and cooked through (165ºF internal temp).
  8. Drain on a wire rack or paper towels.
  9. Serve hot with fries, toast, and copycat Cane’s Sauce.

Notes

  • For thicker breading, double dredge the chicken: dip in buttermilk again, then flour a second time.
  • Use a thermometer to maintain oil temp—too low and they’ll get greasy.
  • Add a pinch of sugar to the flour mix for a subtly sweeter crust.
  • Rest fried chicken on a wire rack instead of paper towels to keep them crispy.
  • Make extra sauce—it keeps in the fridge for up to a week.
