Description
A comforting and cheesy Copycat Costco Chicken Bake that brings the flavors of a popular dish to your home.
Ingredients
Scale
- 1 lb Prepared Pizza Dough (Can substitute with homemade dough or store-bought.)
- 2 cups Skinless, Boneless Chicken Breasts (Rotisserie chicken offers a quick alternative.)
- 1 tsp Kosher Salt (Sea salt is a great substitute.)
- 1 tsp Fresh Black Pepper (White pepper can be used instead.)
- 1 tsp Garlic Powder (Adjust salt if using fresh garlic.)
- 2 tbsp Olive Oil (Can swap for vegetable oil or butter.)
- 1/2 cup Water (Chicken broth can be used for richer flavor.)
- 1 cup All-Purpose Flour (Gluten-free flour can also work.)
- 1/2 cup Creamy Caesar Dressing (Homemade dressing is a good alternative.)
- 1 cup Beef Bacon (Turkey bacon is a lighter option.)
- 1/4 cup Green Onions (Chives can be used for a subtle alternative.)
- 1 cup Shredded Italian Cheeses (Mozzarella, Provolone) (Mix in cheddar or Monterey Jack for variation.)
- 1/2 cup Shredded Parmesan Cheese (Pecorino Romano serves as a good substitute.)
- 1 large Egg (A flax egg works in vegan adaptations.)
Instructions
- Season the skinless, boneless chicken breasts with kosher salt and fresh black pepper. Sear them in olive oil until golden brown, about 5 minutes per side. Add water, cover, and simmer until fully cooked, approximately 15 minutes. Shred or dice the cooked chicken and set it aside.
- In the same skillet, sauté the beef bacon over medium heat until crispy, about 5-7 minutes. Crumble the bacon into smaller pieces and set aside.
- In a large mixing bowl, combine the shredded chicken, crumbled beef bacon, creamy Caesar dressing, shredded Italian cheeses, chopped green onions, and garlic powder. Stir until all ingredients are mixed.
- Preheat your oven to 400°F (200°C). Lightly flour a clean surface, then divide the pizza dough into four equal portions. Roll each portion into a rectangle about ¼ inch thick.
- Spoon filling onto one half of each dough rectangle, leaving a small border. Fold the other half over and press the edges firmly to seal. Transfer to a baking sheet lined with parchment paper.
- Beat the large egg in a small bowl and brush the tops of each bake with the egg wash. Sprinkle any remaining shredded cheeses on top.
- Place in the preheated oven and bake for 20-25 minutes until puffed, bubbling, and golden brown. Allow to rest for a few minutes before serving.
