Description

Indulge in Cinnamon Roll Pancakes, a delightful mashup of fluffy pancakes and gooey cinnamon rolls, perfect for brunch.

Ingredients

Scale
  • 1 cup All-Purpose Flour (Can substitute with gluten-free flour blend)
  • 2 teaspoons Baking Powder (Ensure it’s fresh)
  • 1/2 teaspoon Salt (Sea salt recommended)
  • 1 cup Milk (Any non-dairy milk works as a substitute)
  • 1 large Egg (Use a flax egg for vegan option)
  • 2 tablespoons Vegetable Oil (Melted butter can be a substitute)
  • 2 tablespoons Melted Butter (Vegetable oil can be a substitute)
  • 1/4 cup Brown Sugar (Light or dark brown sugar can be used)
  • 1 tablespoon Ground Cinnamon (Mixing in some nutmeg can elevate the taste)
  • 4 ounces Cream Cheese (Mascarpone is a good alternative)
  • 1 cup Powdered Sugar (Adjust quantity to suit sweetness preference)
  • 1 teaspoon Vanilla Extract (Using pure vanilla is recommended)

Instructions

  1. In a bowl, combine melted butter, brown sugar, and ground cinnamon. Mix until well incorporated. Transfer the mixture to a ziplock bag and let it thicken for 10-15 minutes to ensure perfect piping texture.
  2. In a large bowl, whisk together the flour, baking powder, and salt. In another bowl, mix the milk, vegetable oil, and egg until just combined. Gently fold the wet ingredients into the dry ingredients to avoid overmixing.
  3. In a microwave-safe bowl, heat the cream cheese and melted butter until warm. Whisk until smooth, then fold in the powdered sugar and vanilla extract until you achieve a creamy glaze consistency.
  4. Preheat a non-stick skillet over low heat. Pour ½ cup of batter onto the skillet. Pipe the cinnamon filling in a swirl on top of the batter. Cook until bubbles appear on the surface, then flip and cook until golden brown, about 2-3 minutes per side.
  5. Stack your pancakes on a plate, generously drizzle with the cream cheese glaze, and consider adding optional toppings like powdered sugar or chopped nuts.
