- 3 large eggs
- 1/4 cup melted butter
- 1 teaspoon vanilla extract
- 1/4 cup sliced almonds
- 1/4 cup powdered keto sweetener (for glaze, optional)
- 1 tablespoon almond milk or eggnog (for glaze, optional)
Instructions
- Preheat your oven to 350°F (175°C). Grease or line a loaf pan with parchment paper.
- In a bowl, whisk together almond flour, baking powder, cinnamon, and nutmeg.
- In a separate bowl, mix eggs, melted butter, granulated sweetener, eggnog, and vanilla extract.
- Combine the wet ingredients into the dry ingredients and stir until smooth.
- Pour half of the batter into the prepared pan.
- Sprinkle a mix of cinnamon and sweetener on top, then pour the remaining batter over it.
- Use a knife to gently swirl the cinnamon layer through the batter.
- Sprinkle sliced almonds on top.
- Bake for 40–50 minutes or until a toothpick comes out clean.
- Cool for 15 minutes in the pan, then transfer to a wire rack.
- (Optional) Mix powdered sweetener with eggnog or almond milk to create glaze and drizzle over cooled bread.
