Instructions

  1. Combine 1 cup water, 1/2 cup butter, 1/4 teaspoon salt, and 1 tablespoon sugar in a saucepan. Heat over medium heat until boiling.
  2. Remove from heat and add 1 cup all-purpose flour all at once. Stir vigorously until a smooth dough forms and pulls away from the sides of the pan.
  3. Transfer dough to a mixing bowl and let cool for 5-10 minutes.
  4. Add 3 large eggs one at a time, beating well after each addition until the dough is smooth and glossy.
  5. Stir in 1 teaspoon vanilla extract.
  6. Transfer the dough to a piping bag fitted with a large star tip.
  7. Heat 2-3 inches of vegetable oil in a deep pot to 350-375°F (175-190°C).

  10. Remove churros with a slotted spoon and drain on a wire rack lined with paper towels.
  11. Combine 1 cup sugar and 2 tablespoons cinnamon in a shallow dish.
