Ingredients
- 1 ½ cups graham cracker crumbs
- 5 tablespoons granulated sugar
- 6 tablespoons unsalted butter, melted

- 32 ounces cream cheese, softened

Instructions
- Combine graham cracker crumbs, 5 tablespoons granulated sugar, and 1 teaspoon ground cinnamon in a medium bowl.
- Add 6 tablespoons of melted butter and mix until the crumbs are evenly moistened.
- Press the mixture firmly into the bottom of a 9-inch springform pan.
- Bake the crust at 350°F (175°C) for 8-10 minutes. Let it cool slightly.
- In a large bowl, beat softened cream cheese until smooth.
- Gradually add 1 ½ cups granulated sugar, vanilla extract, ½ teaspoon ground cinnamon, and ¼ teaspoon salt. Beat until combined.
- Add eggs one at a time, beating well after each addition. Do not overmix.
- Stir in the sour cream until just combined.
- Pour the cheesecake filling over the pre-baked crust.
- Bake in a preheated oven at 325°F (160°C) for 60-75 minutes, or until the edges are set and the center has a slight jiggle.
- Turn off the oven, crack the door, and let the cheesecake cool in the oven for 1 hour.
- Remove from the oven and let it cool completely on a wire rack.
