- 1 cup unsalted butter, softened
- 2/3 cup granulated sugar
- 2 large egg yolks
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1/4 teaspoon salt
- 1/2 cup seedless raspberry jam
- Powdered sugar, for dusting (optional)
Instructions
- Cream the butter and sugar together on medium speed until light and fluffy (about 2–3 minutes).
- Add the egg yolks one at a time, mixing well after each. Stir in the vanilla extract.
- Gradually mix in the flour and salt until a soft dough forms. Do not overmix.
- Wrap the dough in plastic wrap and chill for 30–60 minutes.
- Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
- Roll dough into 1-tablespoon-sized balls. Place on sheet and gently press your thumb into the center.
- Fill each indentation with about 1/2 teaspoon of raspberry jam.
- Bake for 12–14 minutes, or until edges are lightly golden.
- Let cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack.
- Dust with powdered sugar once fully cooled, if desired.
