- 0.5 cup fresh parsley, finely chopped
- 3 cloves garlic, minced
- 1 red chili or 1 tsp red pepper flakes, finely chopped
- 1 tsp dried oregano
- 0.25 cup red wine vinegar
- 0.5 cup olive oil
- 0.75 tsp salt
- 0.5 tsp black pepper
- 1.5 pounds boneless skinless chicken thighs
Instructions
- In a bowl, combine parsley, garlic, chili, oregano, vinegar, olive oil, salt, and pepper. Stir well until the mixture is fully combined.
- Set aside half the chimichurri sauce for serving.
- Place chicken thighs in a bowl or zip-top bag. Add the remaining chimichurri and coat thoroughly.
- Marinate the chicken for at least 30 minutes (or up to 4 hours in the fridge).
- Preheat a grill or grill pan over medium-high heat and lightly oil the grates.
- Grill the chicken thighs for 5–6 minutes per side, or until fully cooked through (internal temperature should reach 165°F / 74°C).
- Transfer grilled chicken to a plate and let it rest for 5 minutes.
- Spoon the reserved chimichurri sauce over the chicken just before serving.
Notes
- Adjust the spiciness by varying the amount of chili or red pepper flakes.
- This dish pairs well with grilled vegetables or a fresh salad.
