  • 1 medium red onion, chopped
  • 1 red bell pepper, chopped
  • 1 teaspoon ground cumin
  • 1/2 teaspoon chili powder
  • 1 teaspoon kosher salt
  • 1/2 teaspoon ground black pepper
  • 2 cloves garlic, minced
  • 1 (10-ounce) can diced tomatoes with green chilies
  • 1 (15-ounce) can black beans, drained and rinsed
  • 1 cup frozen corn
  • 2 cups shredded cooked chicken
  • 1 cup salsa
  • 2 cups crushed tortilla chips
  • 2 cups shredded Mexican cheese blend
  • Chopped cilantro and sour cream for garnish (optional)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Heat olive oil in a large skillet over medium heat. Add the chopped onion and bell pepper, and cook for about 5 minutes until softened.
  3. Stir in cumin, chili powder, salt, black pepper, and garlic. Cook for another minute until fragrant.
  4. Add diced tomatoes with chilies, black beans, corn, cooked chicken, and salsa. Stir to combine and heat through for 3–4 minutes.
  5. In a 9×13-inch baking dish, spread half of the crushed tortilla chips evenly.
  6. Pour the chicken mixture over the chips, spreading it out.
  7. Top with the remaining tortilla chips and shredded cheese.
  8. Bake for 20–25 minutes, until the cheese is melted and bubbly.
  9. Garnish with chopped cilantro and a dollop of sour cream if desired.
  10. Serve hot.
