Ingredients
- 12 ounces penne pasta
- 3 cups diced cooked chicken
- 3 tablespoons butter
- 2 tablespoons flour
- 1 teaspoon minced garlic
- 2 cups whole milk
- 1 cup heavy cream
- 3/4 cup grated parmesan cheese
- 2 cups shredded mozzarella cheese (divided)
- Salt and pepper to taste
- Cooking spray
- 1 tablespoon parsley (chopped)
Instructions
- Preheat oven to 375°F (190°C) and prepare a 3-quart baking dish with cooking spray.
- Melt butter in a large skillet over medium heat and cook minced garlic until fragrant, about 30 seconds.
- Whisk in flour to create a roux, stirring for about 1 minute until light golden.
- Gradually pour in milk and heavy cream, whisking until the sauce thickens, about 4-5 minutes.
- Stir in grated parmesan and 1/2 cup of mozzarella cheese, seasoning with salt and pepper.
- Combine cooked penne and diced chicken in a large bowl. Pour the sauce over and mix well.
- Transfer the mixture to the prepared baking dish. Sprinkle the remaining mozzarella cheese on top.
- Bake uncovered for about 20 minutes, until cheese is bubbly and golden brown.
- Garnish with chopped parsley before serving.
