- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 large egg
- 1 teaspoon pure vanilla extract
- 2 cups all-purpose flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 1/2 teaspoons ground cardamom
- Optional: additional sugar for rolling
- Optional: pinch of cinnamon
Instructions
- Cream the butter and sugar in a large mixing bowl until light and fluffy (2–3 minutes).
- Add the egg and vanilla extract, mixing until smooth and well combined.
- In a separate bowl, sift together flour, baking soda, salt, and cardamom.
- Slowly mix the dry ingredients into the wet ingredients until just combined.
- Chill the dough for 30 minutes to 1 hour (optional, but helps control spread).
- Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper or baking mats.
- Scoop dough into balls and optionally roll in sugar. Flatten lightly with a fork or glass.
- Bake for 10–12 minutes, until edges are golden and centers are set.
- Let cool for 5 minutes on the sheet, then transfer to a wire rack to cool fully.
