This Caramelized Onion and Gruyere Dip is a savory, creamy, and cheesy appetizer. It features slow-cooked onions mixed with melty Gruyere and cream for a warm dip. Perfect for game night or gatherings.

- 3 large yellow onions, thinly sliced
- 2 tablespoons unsalted butter
- 1 tablespoon olive oil
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 teaspoon sugar
- 1/4 cup dry white wine
- 4 oz cream cheese, softened
- 1/2 cup sour cream
- 1/2 cup mayonnaise
- 1 1/2 cups grated Gruyere cheese
- 1/4 cup grated Parmesan cheese
- 1 teaspoon fresh thyme leaves
- Pinch of cayenne or smoked paprika (optional)
- Toasted baguette slices, crackers, or vegetables for serving
Instructions
- Melt butter and olive oil in a large skillet over medium heat. Add sliced onions, salt, pepper, and sugar. Cook slowly, stirring occasionally, for 30–40 minutes until golden brown.
- Deglaze the pan with wine, scraping up the browned bits. Cook until liquid is mostly gone. Let cool slightly.
- In a bowl, mix cream cheese, sour cream, and mayo until smooth. Stir in the onions, Gruyere, Parmesan, and thyme.
- Transfer the mixture to a greased baking dish and sprinkle extra Gruyere and Parmesan on top.
- Bake at 375°F (190°C) for 20–25 minutes, or until bubbly and lightly golden.
- Broil for 2–3 minutes for a browned top—watch closely.
- Garnish with thyme or paprika. Serve warm with your choice of dippers.
