Description

These Cajun Shrimp Sausage Kebabs are a flavorful and easy-to-make dish perfect for summer BBQs. Featuring juicy shrimp, spicy sausage, tender potatoes, and sweet corn, all coated in zesty Cajun seasoning and grilled to perfection, these kebabs are a crowd-pleasing favorite.


Ingredients

  • 4 medium Red Potatoes, boiled until tender
  • 2 ears Sweet Corn, cut into rings
  • 1 pound Medium to Large Shrimp, shell removed
  • 1 pound Andouille or Smoked Sausage, cut into sections
  • 2 tablespoons Cajun Seasoning
  • 4 Wooden or Metal Skewers (soak wooden skewers in water for 30 minutes before use)
  • 2 tablespoons Olive Oil (for oiling grill grates)
  • 1/4 cup Fresh Herbs, chopped parsley or cilantro (optional, for garnish)

Instructions

  1. Preheat your grill to medium heat. If using wooden skewers, soak them in water for at least 30 minutes to prevent burning.
  2. Boil the quartered potatoes and sweet corn in a large saucepan for about 5 minutes until just tender. Drain and cool them in ice water to stop the cooking process.
  3. On each skewer, thread the sausage, shrimp, corn, and potatoes, alternating the ingredients. Leave about 1 inch of space at both ends of the skewer for easy handling.
  4. Sprinkle a generous amount of Cajun seasoning over the assembled Cajun shrimp sausage kebabs on both sides, ensuring they are well coated.
  5. Lightly oil the grill grates using a cloth dipped in olive oil to prevent sticking.
  6. Place the Cajun shrimp sausage skewers on the grill. Cook for about 3-5 minutes on each side, or until the shrimp turn opaque and the vegetables are tender.
  7. Carefully slide the ingredients off the skewers onto a serving platter.
  8. Garnish with freshly chopped parsley or cilantro, if desired.

Notes

  • Soak wooden skewers for at least 30 minutes before grilling to prevent them from burning.
  • Aim for shrimp that curls slightly as it cooks; overcooking will make them rubbery.
  • Don’t skimp on the Cajun seasoning for the best flavor.
  • Store any leftovers in an airtight container in the refrigerator for up to 3 days.
  • To reheat, thaw overnight in the fridge and warm up on the grill or in the oven at 350°F for 10-15 minutes.
