Instructions
- Beat the softened salted butter and sugar until pale and fluffy.
- Add the egg yolks one at a time, beating well after each addition.
- Whisk flour and baking powder together, then fold into the wet mixture until a thick dough forms.
- Roll dough to ½ inch thick between parchment sheets and cut into rounds.
- Chill the rounds on a lined baking tray for at least 30 minutes.
- Preheat oven to 325°F (160°C).
- Bake the cookies for 15–18 minutes until golden brown at the edges.
- Cool on the tray for 5 minutes before transferring to a wire rack.
- Optional: Drizzle with sugar glaze or sprinkle with flaky salt once cooled.
