Delicious Quick & Easy Homemade Butter Chicken Recipe
Ingredients
- 1.5 lbs (about 680g) boneless, skinless chicken (thighs or breasts), cut into 1-inch pieces
- 1/2 cup plain full-fat yogurt
- 1 tablespoon ginger-garlic paste
- 1 teaspoon red chili powder
- 1/2 teaspoon turmeric powder
- 1 teaspoon garam masala
- 1/2 teaspoon cumin powder
- 1 teaspoon coriander powder
- 1 tablespoon fresh lemon juice
- 1/2 teaspoon salt, or to taste
- 1 tablespoon mustard oil (optional)
- 3 tablespoons unsalted butter (plus more for cooking chicken)
- 1 large yellow onion, finely chopped
- 1.5 tablespoons ginger-garlic paste
- 1 green chili, slit lengthwise (optional)
- 1 cinnamon stick
- 3–4 green cardamom pods
- 3–4 whole cloves
- 1 bay leaf
- 1 can (28 ounces) crushed tomatoes
- 1/2 cup raw cashews, soaked in hot water
- 1 teaspoon red chili powder
- 1 teaspoon garam masala
- 1 teaspoon coriander powder
- 1/2 teaspoon cumin powder
- 1 tablespoon dried fenugreek leaves
- 1–2 tablespoons granulated sugar
- 1 teaspoon salt, or to taste
- 1/2 cup heavy cream
- 1/2 cup water or chicken broth, as needed
- Fresh coriander leaves, chopped for garnish
- Thin juliennes of fresh ginger (optional)
- Naan bread, rice, or roti for serving
Instructions
- In a bowl, combine chicken chunks with salt, garlic powder, sweet paprika, curry powder, and Greek yogurt. Mix well and let marinate for at least 30 minutes.
- Heat vegetable oil in a large pan over medium-high heat. Sear the marinated chicken in batches until golden brown. Remove chicken and set aside.
- In the same pan, melt 2 tablespoons of butter. Add minced garlic and diced onion, sauté until softened, about 5-7 minutes.
- Stir in the tomato sauce, sugar, salt, and black pepper. Bring to a simmer, then reduce heat and cook for 15-20 minutes, stirring occasionally.
- Return the seared chicken to the simmering sauce. Stir in the remaining butter and heavy cream. Continue to simmer for 10-15 minutes.
- Taste and adjust seasoning as needed. Garnish with fresh coriander or a swirl of extra cream. Serve hot with naan or rice.

- Marinating for longer enhances flavor.
- Use Kashmiri chili for color and mild heat.
- Fresh tomatoes can be used instead of canned.
