  • 1 pound (450g) mixed mushrooms (cremini, shiitake, oyster), sliced 1/4-inch
  • 1 medium red bell pepper, thinly sliced
  • 1 medium yellow onion, thinly sliced or cut into wedges
  • 1 cup snow peas or sugar snap peas (optional)
  • 5–6 cloves garlic, minced
  • 2-inch piece fresh ginger, peeled and minced/grated
  • 1/2 cup low-sodium soy sauce
  • 1/4 cup vegetarian oyster sauce (mushroom-based)
  • 2 tablespoons rice vinegar
  • 2 tablespoons light brown sugar (or maple syrup)
  • 1 tablespoon cornstarch
  • 1/2 teaspoon white pepper
  • 1/4 cup water or low-sodium vegetable broth
  • 1 teaspoon toasted sesame oil
  • 3–4 tablespoons high-heat cooking oil (canola, grapeseed, or peanut)
  • 2 green onions, thinly sliced (for garnish)
  • 1 tablespoon toasted sesame seeds (for garnish)
  • A dash of chili flakes or drizzle of chili oil (optional, for garnish)

Instructions

  1. Wash and trim broccoli into 1-1.5 inch florets. Blanch in salted boiling water for 1-2 minutes until vibrant green and tender-crisp; immediately transfer to an ice bath, then drain thoroughly. Wipe mushrooms clean, trim stems, and slice 1/4-inch thick. Thinly slice red bell pepper and yellow onion.
  2. In a medium bowl, whisk together low-sodium soy sauce, vegetarian oyster sauce, rice vinegar, and light brown sugar until the sugar dissolves. In a small bowl, whisk cornstarch with 1/4 cup water or vegetable broth until no lumps remain. Add this slurry, white pepper, and toasted sesame oil to the main sauce mixture; whisk thoroughly.
  3. Heat a wok or large skillet over high heat. Add 2 tablespoons of cooking oil. Add sliced mushrooms in a single layer and sear for 2-3 minutes until golden-brown. Stir and cook for another 3-5 minutes until all sides are browned. Remove mushrooms and set aside with the blanched broccoli.
  4. Add another tablespoon of oil if needed. Add sliced yellow onion and stir-fry for 2-3 minutes until it begins to soften. Add minced garlic and ginger; stir-fry for 30 seconds until fragrant. Add sliced red bell pepper and snow peas; stir-fry for 2-3 minutes until tender-crisp.
  5. Reintroduce the blanched broccoli and seared mushrooms to the pan. Toss everything together for 1-2 minutes to heat through. Pour the prepared stir-fry sauce over the vegetables. Stir and toss for 1-2 minutes until the sauce thickens and coats all the ingredients. Turn off the heat.
  6. Transfer the stir-fry to a serving platter or individual bowls. Garnish with green onions and sesame seeds. For heat, add chili flakes or chili oil. Serve hot with steamed rice or stir-fried noodles.
