Description
Bite-sized cake pops made with yellow cake mix, frosted, dipped in white and milk chocolate, and covered in sprinkles. An easy recipe perfect for birthdays.
Ingredients

- 1 box (15.25 ounces) yellow cake mix
- 1 cup water
- 1/3 cup vegetable oil
- 3 large eggs
- 1 cup (2 sticks) unsalted butter, softened
- 3 cups powdered sugar
- 1/4 cup milk
- 1 teaspoon vanilla extract
- Pinch of salt
- 6 ounces white chocolate candy melts
- 6 ounces milk chocolate candy melts
- Assorted sprinkles
- Lollipop sticks
- Styrofoam block for display
Instructions
- Preheat oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
- Combine cake mix, water, oil, and eggs in a large bowl. Beat on medium speed for 2 minutes until smooth.
- Pour batter into prepared pan and bake for 25-30 minutes, or until a wooden skewer inserted into the center comes out clean.
- Let cake cool completely in the pan before frosting.
- Beat softened butter until light and fluffy (3-5 minutes).
- Gradually add powdered sugar, one cup at a time, beating well after each addition.
- Add milk and vanilla extract. Beat until smooth and creamy. Adjust consistency with milk or powdered sugar as needed.
- Add a pinch of salt.
- Crumble cooled cake into a large bowl.
- Add frosting and mix until evenly combined. Add a tablespoon of milk at a time if too dry.
- Refrigerate for at least 30 minutes (optional, but recommended).
- Roll cake mixture into 1-inch balls using a cookie scoop (optional). Place on a parchment-lined baking sheet.
- Freeze for at least 30 minutes.
- Melt white chocolate melts according to package directions.
- Insert a lollipop stick halfway into each frozen cake pop.
- Dip each cake pop in melted white chocolate, tapping off excess.
- Sprinkle with sprinkles immediately.
- Place on parchment paper and let chocolate set (about 30 minutes).
- Repeat steps 14-18 with milk chocolate melts and different sprinkles (optional).
- Insert cake pops into a Styrofoam block for display.
- Add a ribbon or decorative paper (optional).
Notes
- Don’t overmix the cake batter.
- The fluffier the butter, the fluffier the frosting.
- Refrigerating the cake pop mixture before shaping makes it easier to handle.
- Freezing the cake pops before dipping prevents melting.
- Get creative with your sprinkles and chocolate combinations!
