Instructions
- Pat the halibut fillets thoroughly dry with paper towels.

- In a separate bowl, whisk together 1 1/2 cups of ice-cold beer, 1 lightly beaten egg, and 2 tablespoons of vegetable oil.
- Gradually pour the wet ingredients into the dry ingredients, whisking gently until just combined. A few lumps are okay; do not overmix.
- Place the beer batter in the refrigerator while you heat the oil.
