- 1 lb beef sirloin or ribeye, thinly sliced
- 8 oz cremini mushrooms, sliced
- 1 medium yellow onion, diced
- 2 cloves garlic, minced
- 1 tbsp all-purpose flour
- 1 cup beef broth
- 1 tbsp Worcestershire sauce
- 1 tsp Dijon mustard
- ¾ cup sour cream
- ½ tsp salt
- ¼ tsp black pepper
- 2 tbsp butter
- 1 tbsp olive oil
- 1 tbsp fresh parsley, chopped (optional)
Instructions
- Slice beef into thin strips against the grain. Prepare all vegetables before cooking.
- Heat 1 tbsp each of butter and olive oil in a large skillet. Sear beef in batches until browned. Remove and set aside.
- Add more butter if needed, then sauté diced onion until soft, about 3–4 minutes. Add garlic and cook 30 seconds.
- Stir in mushrooms and cook until browned and their moisture has evaporated, about 5–7 minutes.
- Sprinkle flour over the mushrooms and stir to coat. Let it cook for 1 minute.
- Gradually add beef broth while stirring. Add Worcestershire sauce and Dijon mustard. Let sauce thicken.
- Lower the heat and stir in sour cream. Return beef to skillet and simmer until heated through. Season with salt and pepper.
- Garnish with parsley and serve over noodles, rice, or mashed potatoes.
