  • 2 large eggs
  • 1/2 cup plain Greek yogurt
  • 1/4 cup maple syrup
  • 1 teaspoon vanilla extract
  • 1/2 cup vanilla protein powder
  • 1 cup oat flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1/3 cup chopped walnuts (plus extra for topping)
  • Optional: mini chocolate chips or flax seeds

Instructions

  1. Preheat oven to 350°F (175°C). Line a muffin tin with liners or grease it.
  2. Mash ripe bananas in a large bowl.
  3. Whisk in eggs, Greek yogurt, maple syrup, and vanilla extract.
  4. Add protein powder, oat flour, baking soda, baking powder, cinnamon, and salt. Stir until just combined.
  5. Gently fold in chopped walnuts.
  6. Divide batter into muffin cups, filling each about 3/4 full.
  7. Sprinkle extra walnuts on top.
  8. Bake for 18–22 minutes, or until a toothpick comes out clean.
  9. Cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
