Savory Baked Salmon with Spinach for a Healthy Weeknight Delight


Ingredients

  • 4 fillets Salmon Fillet
  • to taste Salt
  • to taste Pepper
  • 2 cups Spinach
  • 1 medium Onion
  • 2 cloves Garlic
  • 1/2 cup Sour Cream
  • 1 cup Mozzarella
  • 2 tablespoons Olive Oil

Instructions

  1. Heat olive oil in a skillet over medium heat. Add sliced onions and sauté for 3-4 minutes until they’re translucent. Toss in minced garlic and cook for an additional 30 seconds.
  2. Mix in thawed and drained spinach into the skillet. Cook for about 2-3 minutes, season generously with salt and pepper, and fold in the sour cream.
  3. Preheat your oven to 175°C (347°F). Season the salmon fillets with salt and pepper. Sear both sides in a pan for 2 minutes.
  4. Place the salmon skin-side down in a greased baking dish. Top each fillet with the creamy spinach mixture and mozzarella.
  5. Bake in the preheated oven for 15-20 minutes until salmon is opaque and cheese is golden and bubbly.
  6. Allow the dish to rest briefly before serving with the cheesy spinach mixture.
