- 2 tblsp Active Dry Yeast (Instant yeast can be used in the same amount.)
- 1/2 cup Warm Water (Ensure it’s not too hot.)
- 2 large Eggs (Egg substitutes available for vegan option.)
- 1 tblsp Kosher Salt (Sea salt is a suitable alternative.)
- 4 cups All-Purpose Flour (For gluten-free, use a baking blend.)
- 1 round Brie Cheese (Can substitute with Camembert.)
- 1/2 cup Fresh Rosemary, Thyme, Oregano, Parsley (Fresh herbs can be substituted with dried (1/3 dried to fresh ratio).)
- 2 tblsp Olive Oil (Replace with melted butter for richer flavor.)
- 1 tblsp Red Wine Vinegar (White wine vinegar is a viable substitute.)
- 1 tsp Crushed Red Pepper Flakes (Omit for a milder dish.)
- 1/2 cup Pomegranate Seeds (Replace with chopped nuts for added crunch.)
Instructions
- Heat the whole milk in a saucepan until scalding but not boiling. Dissolve unsalted butter and granulated sugar in the warm milk, then mix in active dry yeast and warm water until frothy.
- In a stand mixer, combine the yeast mixture with eggs, kosher salt, and half the all-purpose flour. Mix until smooth, then gradually incorporate the remaining flour until the dough is elastic.
- Place the dough in a lightly oiled bowl and cover it with a clean kitchen towel. Let it rise in a warm area until doubled in size, about 1.5 to 2 hours.
- Gently punch down the risen dough to release air. Divide it into approximately 46 pieces, each the size of a golf ball. Keep these dough balls covered to prevent them from drying out.
- Preheat your oven to 375°F (190°C). Take a baking pan and place a wheel of brie in the center. Arrange the dough balls around the brie in a circular pattern.
- Brush the dough with egg wash and sprinkle with your choice of fresh herbs and salt. Allow it to rise again for about 45 minutes.
- Once the dough has risen, place the pan in the preheated oven and bake for 20-25 minutes, or until the wreath is golden brown and puffed.
- Remove from the oven and let it cool slightly. Garnish your wreath with vibrant pomegranate seeds and drizzle the remaining herbed olive oil over the brie. Serve warm for a delightful treat!
