Description

Authentic Jambalaya with Chicken, Shrimp, and Sausage Delight. Experience the warm flavors in a one-pot meal bursting with Cajun spices.


Ingredients

  • 1 cup Long-grain white rice
  • 1 can Crushed tomatoes
  • 2 tablespoons Tomato paste
  • 1 pound Shrimp (fresh or frozen)
  • 1 pound Sausage (Andouille variety recommended)
  • 1 pound Boneless chicken
  • 1 medium Onion (chopped)
  • 3 cloves Garlic (minced)
  • 2 stalks Celery (chopped)
  • 2 tablespoons Green onion (chopped, for garnish)
  • 1 teaspoon Dried thyme
  • 2 tablespoons Cajun seasoning
  • 1 teaspoon Oregano
  • 1 teaspoon Salt (adjust to taste)
  • 1 teaspoon Black pepper (adjust to taste)
  • 3 tablespoons Cooking oil (vegetable or canola)
  • 3 cups Chicken or vegetable broth

Instructions

  1. Combine the Cajun seasoning, black pepper, salt, oregano, and thyme in a small bowl.
  2. Season the chicken by mixing it with ½ tablespoon of the prepared seasoning in a bowl.
  3. Toss the shrimp with 1 teaspoon of the mixed seasonings and set aside.
  4. Heat 3 tablespoons of oil in a pan over medium heat. Cook the chicken for about 3-4 minutes on each side until it’s light brown. Remove and set aside.
  5. Sauté the shrimp in the remaining oil for 2 minutes on each side until they turn pink. Remove them from heat.
  6. Add 1 tablespoon of oil to the pan and sauté the sausage until it’s nicely browned.
  7. Sauté the onion and garlic in 4-5 tablespoons of oil until fragrant.
  8. Stir in the tomato paste and crushed tomatoes. Cook for 3 to 4 minutes.
  9. Mix the remaining seasoning, washed rice, celery, and chicken broth into the pan.
  10. Cover the pot and cook on medium heat for 15-20 minutes, stirring occasionally.
  11. Once the rice is tender, add the cooked chicken, shrimp, and sausage back into the pot.
  12. Garnish with chopped green onion before serving.
